The Norton Norax belts are my absolute favorite belts for all kinds of knife work. I use the 320 grit as my baseline for sharpening, and also use it as my last belt for knife making bevel work. The extremely minimal belt bump makes for really nice machine finished bevels. You can flood these with water and they will work flawlessly. The structured grit also makes for cooler grinding. I went from using a 36 grit razor star to a 120 Norax and could instantly tell the difference in heat generated from grinding bevels. A fresh norax when using for sharpening give an almost serrated edge to it, as it breaks in the edge becomes much more clean and standard with less of the serration look to it. They regularly last 500+ knife sharpenings before I feel like they are cutting too slow.
